Pumpkin Roll

Pumpkin Roll
3 eggs 1 t. Baking soda
1 c. sugar 2/3 c. pumpkin
3/4 c. flour 1/2 t. cinnamon
Preheat oven to 375 degrees. Blend all ingredients and put in a 12×18 baking sheet lined with foil (spray foil w/cooking spray). Bake for 15 min. Remove from oven and turn onto a tea towel. Roll and let cool (approximately 15 min.).
Filling:
1 – 8 oz. package cream cheese (room temp)
1 t. vanilla
2 T. margarine
1 c. powder sugar
Mix well with blender. Unroll and fill cake. Reroll and refrigerate 3-4 hours before serving.
