Apple Dip
1 – 8 oz cream cheese
1/4 c br. sugar 1/4 c sugar
1 tsp vanilla
1 package of butter brickle chips (use as much as you’d like – a partial bag is enough)

Key Lime Pie
1 can of sweetened cond. milk 4T Lime Juice & 4 T Lemon Juice
1 c heavy whipping cream 2-3 drops of green food coloring
Combine milk, juices, & food coloring in bowl – will take a while to come together. In another bowl, whip cream until stiff peaks – then fold together. Chill graham cracker pie crust for 15 min. in freezer. Pour mix into pan and chill in frig. 1 hr. To make a cake pan – double everything
Chicken Enchilada Dip
smaller batch – 1 and 1/2 cups shredded chicken
larger batch (LB) - 2 c chicken
1 can cream of chicken soup LB 2 can cream of chicken soup
1 c shredded cheddar cheese LB 2 c shredded cheese
1 can (5oz) evaporated milk LB 1 can (12oz) evap. milk
1/2 c chopped celery LB 1 c chopped celery
1/3 c chopped onion LB 2/3 c chopped onion
1 can (4 oz) chopped green chilies LB 1 can (4.5oz) green chilies
3/4 envelope taco seasoning LB 1 envelope taco seasoning
Combine all ingredients, microwave, uncovered 4-5 minutes. Stir – microwave 3-4 minutes longer until heated through. Can also put into crock pot and heat & serve with tortilla chips.
Chocolate Chip Cheese Ball1-8 oz pkg of cream cheese (softened) 1/2 c butter(softened- no substitutes)1/2 tsp vanilla 3/4 c powdered sugar 2 T.brown sugar 3/4 c mini chocolate chips 3/4 c finely chopped pecans
Beat cream cheese, butter and vanilla until fluffy. Gradually add sugars, beat until just softened. Stir in choc. chips. Cover & refrigerate for 2 hours. Place on long piece of plastic wrap – shape into a ball. Refrigerate 1 hour. Just before serving, roll cheese ball in pecans. Serve on graham crackers.
Salted Nut Roll
2 Tlb butter 10 oz marshmallows 1 1/2 c. powdered sugar
Melt butter and marshmallows over low heat in medium size pan. Take off heat and add powered sugar and mix well. (will get very sticky) Put in refrigerator pan and all until cool. While this is cooling, melt together over low heat . . .
14 oz kraft caramels 2 Tlb. butter 2 Tlb water
While you keep this warm (just warm enough to stay runny) take out cooled marshmallow mixture and form into several long rolls – about candy bar size. It will be very hard to work with until starts to soften a little. Dip roll into melted caramel mixture with spatula or whatever you find works best for you. Move quickly and coat roll with caramel and put into salted peanuts coating evenly. (cake pan works best for peanuts because you have to be able to get your hands around it to coat it. (grease hands – very sticky) Immediately put roll onto lightly greased piece of plastic wrap. Wrap up tight and then put onto a piece of tin foil and wrap that tightly. Put in refrigerator and it will set up. When ready to serve, just unwrap and slice. It is very monotonous work, but well worth the effort. It helps to have everything set up ready to go – caramel – peanuts - plastic wrap – foil
Sour Cream Raisin Bars
1st layer – Mix these ingred. together until crumbly – press half into a 9×13 pan and bake for 15-20 min at 350.
1 c brown sugar 1 c oleo 1 tsp soda 1 3/4 c oatmeal 1 3/4 c flour
2nd layer – cook until thick and pour over crust. Top with remaining crumbs and bake another 10 – 15 minutes.
4 egg yolks 2 c sour cream 1 1/2 c sugar 2 c raisins
Betty’s Best Bagel Dip (this is a teacher favorite)
2 packages chipped beef (chopped fine)
1 small onion (chopped fine)
1 1/3 cup real mayo
1 1/2 cup sour cream
2 teaspoons accent
2 teaspoons parsley
2 tsp. dill weed
Let set for ultimate taste!
Cut bagels into bite size pieces for dipping. Great snack for teachers and students.
Becky’s Punch Bowl Cake (a little piece of heaven)
1 prepared german chocolate cake mix cubed into 1″ squares
3 bowls of Cool Whip
3 packages of instant chocolate pudding prepared
5 Heath bars crushed (I use a hammer and a zip lock bag)
In a large punch bowl layer all of the ingredients. Layer at least twice ending with Cool Whip and Heath Bar!

Cara’s Caramel Recipe
2 sticks of butter, 2 1/4 C light br. sugar, 1 c light corn syrup, dash of salt
Melt the butter and add other ingredients over medium heat. Then add
1 can of sweetened condensed milk slowly – keep stirring all the time.
Continue to cook over medium heat for 12-15 minutes if making caramels, less time if making sauce. After cooking time is done, add 1 tsp of vanilla. Pour into a buttered container if making caramels. If not – just cut up apples or get out the ice cream – treat time!!
PAC Chicken Hotdish
10 oz. ritz crackers (crushed)
5 cups cubed chicken or turkey
1 can cream of mushroom soup
1 can cream of chicken soup
1 8oz. sour cream
1 can water chestnuts
1 small onion
celery diced
2 sticks of butter
Use half of the crushed ritz cracker in a 9×13 pan. Put the 5 cups of chicken on in the next layer topped with butter chunks. Next layer diced onion, celery and water chestnuts. Blend the soups and sour cream and cover all of the layered ingredients. Top with the other half of crushed crackers. Cover with tin foil for 1/2 hour and remove the foil for the last 40 minutes. Bake at 350 for 1 hr. and 10 min.
